The scale didn’t lie- I had work to do. Paleo/gluten-free eating didn’t fix the problem, but it’s a start. Less nuts, grains & beans for me, more veggies.now!

How do I preserve whatever abundance of fruit we might have falling from our trees? The trusty dehydrater works great for apples, figs, apricots, even veggies. No food waste, AND so tasty!
You can make awesome “bone broth” and other nourishing foods quite quickly and efficiently in a pressure cooker. Fresh-cooked garbanzo beans for salads, too (with a smaller carbon footprint)…
This just in, from my sister-in-law: Amazon has 17 bags of the 5-lb. coconut manna left, for a crazy low price that works out to $5.28/lb. Well, 16 bags left- I just bought one myself!
I’m pretty amped on mega nutritional info, but most importantly, I must remember: God has supplied everything we need. I want to remember that He has given us the land (& not take it for granted).
What to do with all those happy, free-range chicken & duck eggs my friend gave me?! Keep ’em coming- I’ve got the perfect recipe. I added palm sugar (low-glycemic, yes!). And chocolate (super yes!).
Fresh fish must come from a reputable source. (Or, no wonder so-and-so doesn’t like fish!) Frozen fish can be baked; sear-grade is exceptional. It can be cooked rare, whereas frozen is best baked.
