A salad with this dressing made the meal, for our church’s annual Women’s Christmas Dinner. Add it to a spinach salad, with onion & persimmons (or other seasonal fruit). It was also a big hit mixed into a slaw, w/ thin-sliced cabbage, green onion, and cilantro. So tasty!

Meyer Lemon Dressing
An easy way to make flavorful “preserved Meyer lemons”, only easy-style! I just pureed the lemon peel in my Vitamix with some salt, added extra virgin olive oil. Delicious, on so many things!
Caramel Apple Oat Bars

Dolmas: Stuffed Grape Leaves w/Rice, Mint, Pine Nuts…
This is our favorite New Deli recipe for a Greek classic- Dolmas! Since I have a few grape vines, and autumn’s really setting in, I figured I better pull this recipe out and get to work on that brine- easier than shopping for grape leaves in a jar! We LUV these. The brined grape leaves last a looong time… a batch of Dolmas would keep for over a week, except that we eat ’em all!
Fresh Beets Beat Packaged- Pickled, Runner Up
Those packaged beets found in the cold case, steamed & peeled, are a convenience. But they don’t beat fresh-cooked beets for flavor, color, & texture. Put the gloves on- it’ll be less messy!
Artichoke Frittata, Gluten-Free
Many popular breakfast places add flour to their egg dishes, knowing it helps the eggs hold their shape- to stay light, fluffy… But potato starch works too. This is a great dish for party time- easy to make!
Chocolate Mousse, Easy Paleo
Whip the whole eggs until fluffy- easier than separating out the whites… Also, mix the cocoa powder into the honey 1st, which removes lumps. A plus: Honey fights allergies & infections- whoot!
Tabbouleh- Traditional or Gluten-Free
I’d take this over cous-cous any day–it IS a whole food, not just a refined-flour-pasta shaped like grain! Soak Bulgar wheat, add spearmint, parsley, lemon, cucumber, tomato. Light & fresh.
Roasted Red Pepper Soup w/Sweet Potatoes
Sweet potatoes are low-glycemic- so HEALTHY! Add roasted peppers (or cheat & use organic paprika), plus caramelized onion. Puree with a touch of olive oil…SO GOOD.
