Creamy Gluten-Free Mushroom Soup

We used to make a more traditional mushroom soup at The New Deli, using a roux of flour and butter. But why use flour if you can go gluten-free, and let something else give the soup body?

Now we caramelize a pile of onions in butter until golden, then puree that with some mushroom powder, which adds some intense mushroom flavor.

Brazil Bark (For Fast, Healthy Smoothies)

Why “Brazil Bark”? For the best, easy, nutritious smoothies and other drinks! The coconut spread has MCTs that contribute to brain health and energy. The butter is synergistic for those of us taking cod liver oil (which improves our Omega 3/6 ratio). And Brazil nuts give us our daily selenium, which can be hard to come by. Whoot!

We’ve been doing a taste-test of these caramel apple oat bars at The New Deli… what fun! It’s nice to have a Granny Smith apple tree, producing some nice, organic apples. We know just what to do with those!

This is our favorite New Deli recipe for a Greek classic- Dolmas! Since I have a few grape vines, and autumn’s really setting in, I figured I better pull this recipe out and get to work on that brine- easier than shopping for grape leaves in a jar! We LUV these. The brined grape leaves last a looong time… a batch of Dolmas would keep for over a week, except that we eat ’em all!

Quest Bars (& Vitafiber): Recipe, Review

Quest bars: all the rage with many body-builders, paleo-happy types, & for many seeking low-carb solutions to cravings. For me, Quest bars seem OK. But just in a pinch. (Then again, I am in a pinch sometimes!)

I’d never heard of Vitafiber. Or Quest bars. I don’t run with the crowd that works out at the gym and buys muscle-building supplements! But I do get a lot of exercise, and hitch a ride on the Paleo bandwagon often enough, so Nolan’s interests and mine do intersect at points. Not to mention the frugal quality- saving money can be a driving force for me!
